Spicy Shrimp Bites

These are perfect as an appetizer or an entrée. If you want to make it an entrée, I recommend serving it over a bed of yellow rice & arrange your shrimp on top, almost like a shrimp cocktail-but with rice! LOL Or if you prefer, you can place the shrimp onto a skewer when they’re finished cooking if you want to shake things up! Either way you serve them they are scrumptious!

The flavors are spectacular in this dish. The way the sugar/pepper mixture gives you that sweet & spicy at the same time is fab. You can’t just eat one, they’re addictive! I have found the easiest way to make these is to create a little assembly line: shrimp, pineapple, bacon, toothpicks & then season mix! Makes things go smoothly.

Quick tip: Be sure to NOT touch your hands to your face after you have handled the cayenne pepper! Trust me on this one. Wash your hands subito (immediately)!

Spicy Shrimp Bites
What you’ll need:
1 lb LARGE shrimp – peeled, deveined with tails left on
1 can of pineapple CHUNKS (you can use fresh if you prefer)
1 package of bacon
1.5 tbsp brown sugar
1/4 tsp cayenne pepper
1/4 tsp black pepper
toothpicks – wooden

What to do:
Preheat oven to 350. Take your shrimp and place a piece of pineapple into the center. Wrap around a piece of bacon. Secure with toothpick. Continue until all shrimp are assembled. Mix the brown sugar, cayenne & black pepper together. Place assembled shrimp onto a generously sprayed rimmed cookie sheet. Sprinkle season mixture on top evenly. Cook until bacon is done! Serve immediately.

    I LOVE THIS DISH!!!!! WOW!!! When I was in Bali, I tried spicy grilled shrimps and grilled red snapper, I still can’t forget the taste! That was one of the best day in my poor gourmet life :)

    Silly question, but I’m new to this… do the shrimp need to be raw or cooked before they go into the oven? I know you said wait until the bacon is cooked but not sure about the shrimp.
