Tilapia with Tomato/Onion Salsa

This recipe came about as many of my recipes do - I see what I have in my pantry & refrigerator & experiment away. I’m not one to waste food in the house. Sometimes they work, sometimes not so much. This time it did. Obviously, I’m not going to post the ones that didn’t. LOL
This is an incredibly quick, easy & flavorful recipe. One that even the children love (as long as I tell them it’s chicken- haha). I love Tilapia. It is a very light, flaky, white fish. If you’re not a fish person, I hope you’ll give this one a try. It’s not an overpoweringly fishy fish. The texture is soft & smooth & just melts in your mouth like buddah. I served this with my risotto (see recipe here) & it was amazing. The flavors mixed together beautifully.

Ginger Pork Dumplings

I love these dumplings! The combination of ginger, garlic, scallions, and pork is simply scrumptious. Not to mention, they are so much fun to make. They are a little time consuming but if you have a helper it goes quickly!

Remember when making your dumplings that less pork mixture is better. If you put too much the dumplings will tear during steaming and come apart. You’ll know if you put too much. If you have never made dumplings before don’t be afraid, the first few will be a little awkward but once you get the feel of them, it will go smoothly. Practice makes perfect.

Chicken Francaise

This chicken might look & sound a little intimidating but it’s not. It has a few more steps than most of my recipes but the extra effort is worth it. The key is to make sure your chicken is pounded out well, to about 1/4″ thickness. And that when cooking the chicken you use enough oil (otherwise you’ll end up with scrambled eggs & you don’t want that). Also, really shake off the excess dredgings.

I set my chicken in my toaster oven on “warm” while cooking the remaining pieces. If you don’t have a warmer, loosely cover your chicken with tinfoil. The buttery deliciousness of the lemon wine sauce is the perfect finishing touch for this chicken. Try serving this with my asparagus alla paperbag recipe! Enjoy a glass of white wine while cooking this dish. And remember, don’t cook with any wine that you wouldn’t drink yourself!

Herb Roasted Tomatoes

I must admit, I am normally not a fan of the plain tomato, unlesss it is cooked in a sauce or chopped finely on bruschetta ~ then, bring it on. I wondered how they would taste roasted and to the delight of my tastebuds they’re delish! This is such a quick & simple recipe. You can do it in advance of your entrée preparation, they taste even better the longer the flavors marry together. Notice that the garlic is sliced in this recipe. Minced garlic would tend to burn so slicing is best here. When you’re placing them into your serving bowl, don’t forget the drippings. They are amazing to dip your bread into (great as an appetizer this way). Simply delectable.

Roasted Garlic Lime Chicken

I love roasted chicken! It’s quick, easy, delicious, and good for you. Plus who doesn’t like a one pan dinner! I know I do. Dishes are so not my thing.

I have several versions of roasted chicken & this is another I like to make, quite often. I was trying to come up with a new idea for roasted chicken & since I have been on a lime kick for a while I thought why not add lime! The flavors work really well & the smell is intoxicating while it’s cooking. And don’t worry, the garlic is NOT overpowering. I know you’ll be thinking 2 HEADS of garlic. I know you LOVE garlic, but Paula, come on. But it really only lightly flavors the meat from the inside out. You’ll see.

Harwood Homemade Pottery and Giveaway

This week I wanted to share some of my favorite kitchen bowls/containers! These are made by a very talented artisan, who also happens to be a friend of mine. And, YES, I would still love them even if she wasn’t my friend! LOL

It’s happily made hand-thrown functional stoneware. No two pieces are alike & that’s what I like about them. They’re original, unique, beautiful & oh so functional. Pictured below is my favorite bowl that sits on my counter full of GARLIC. If you’ve read many of my recipes you know how much I love garlic! And, YES I truly do use all of that.
