This is my ALL TIME FAVORITE dessert & it is no surprise that it just happens to be Italian! Tiramisu literally translates into “pick me up” and it is certainly that. It’s amazingly light & fluffy in your mouth but packs a powerful taste punch. You taste the espresso, a slight hint of Amaretto, the sweet taste of the Mascarpone (& there’s no substituting regular cream cheese here, you HAVE to use the real ITALIAN Mascarpone) and then the ladyfingers.

I use Vicenzovo Ladyfingers by Vicenzi. Here in Raleigh I find them at my favorite specialty grocery The Tipsy Gourmet. If you have a local specialty store check with them. They are NOT the soft “ladyfingers” you might have seen before. The Italian ladyfingers are hard to the touch and have a slight dusting of sugar on top. DELIZIOSI!

I promise using the specified ingredients WILL make a difference, so it’s worth the extra effort. Also incredibly important is whisking the egg yolks & sugar for 5 minutes! This makes them light & creamy. If you whisk for less you’ll end up with pudding. Be equally as careful when dipping your ladyfingers into the espresso mixture. If you keep them in too long you’ll end up with mushy ladyfingers & a soupy base (not pretty!) I hope you’ll give this dessert a try!

Tiramisu
6 fresh egg yolks - room temperature
1/4 cup sugar
2 small containers Mascarpone - room temperature
2 packages of Ladyfingers
1/2 cup Amaretto di Saronno
4 cups Espresso - cooled
cocoa for garnish

In a mixer, add egg yolks & sugar. Using WHISK attachment, mix for 5 minutes until eggs are creamy, fluffy and light in color.
Add mascarpone and continue to mix until smooth & creamy. Add 1/4 cup of the Amaretto & mix until smooth. In a separate dish, pour the cooled espresso & remaining 1/4 cup of Amaretto. LIGHTLY dip your ladyfingers into espresso mixture & then transfer to a 9 x 12 baking dish until bottom is completely lined (cut/break the ladyfingers if necessary)Spread 1/2 of the cream mixture on top of ladyfingers. Add a second layer of dipped ladyfingers. Spread remaining cream on top. Cover your dish with saran wrap & refrigerate over night. Before serving LIGHTLY dust top with cocoa powder.
