Crostini with Artichoke Spread

This is a perfect appetizer dish! It’s quick, easy to make & is a crowd pleaser. My friend Lainie introduced me to this artichoke dip years ago & it has been a favorite of mine ever since. So a big thank you to Lainie!
I’ve switched up the original recipe just a tad by adding roasted garlic instead of minced garlic & some lemon juice for a little pizazz. You can easily use minced garlic if you don’t have any roasted on hand! In my garlic loving opinion, you CAN’T have enough garlic in this recipe so add to your hearts content. You can also control the level of heat by adding as much or as little hot sauce as you like, or should I say dare! Taste as you go. Remember, as always, much easier to add than to try & take away. You can make this ahead of time and then just reheat before you’re ready to serve. Also would be great served in a bread bowl! It’s a great go to appetizer!

Crostini with Artichoke Spread
2 cans of artichoke hearts – drained
3/4 cup of mayonaise
hot sauce – season to taste
4-6 cloves of roasted garlic
1/2 cup of parmigiano reggiano cheese – grated
tiny squeeze of fresh lemon juice
s/p – season to taste
french baguette – sliced & toasted
Preheat your oven to 350. In a food processor add all ingredients. Season with salt & pepper. Pulse to desired consistency. Spray a small baking dish with cooking spray. Pour mixture into dish. Bake for 30-40 minutes until top is bubbly & color is golden. Prior to serving, toast your bread & then spread dip on slices & serve warm. Garnish with more grated parmigiano reggiano & pepper!

Have you tried grana padano? I use it a lot of the time because parmesan is a little tough to get around here, unless you buy those Kraft shakers… which I don’t think is good at all!

Artichoke Spread was wonderful and so simple. Used the rest of the roasted garlic to toss with some shrimp and lemon. Simple and gorgeous Friday night fare.

This artichoke dip recipe sounds great. I have another version where I add a tiny bit of softened cream chees to the mayonoise. I also add diced leftover roasted ham to the dip. I serve mine warm with pita wedges drizzled with evoo and sprinkled with parm. cheese. I am the foodie in my circle of friends and they always know when I entertain they will be treated to dishes that are unique. I am from Michigan and an artist so the foodie part is quite natural to me. I look forward to viewing other recipes.
