Salmon with Honey Mustard Glaze

After a week of sweets posts I thought I would balance things out with some healthier choices. (Don’t worry, I’ll be back to my sweets & high carbs soon enough. LOL) Summer is in full gear (at least in this part of the world) & I’m not a big fan of heating up the kitchen. So the natural alternative is the grill! Plus by grilling, you have the added benefit of NOT having extra pots & pans to clean! HOORAY! I love to cook but the dishes part, not so much. I must say the grill master or keeper of the tongs in our house is hubs, because, well, he really doesn’t like me to mess with the grill. LOL! I stick to my indoor grill.

We love Salmon & this is a quick, easy peasy recipe. We also use this same glaze recipe on grilled chicken breasts & it’s dee-lish. The kids love this as well. Well okay, we do have to tell middle man it’s chicken but hey (don’t judge) he’ll eat it if you tell him it’s chicken. So, as you can imagine he eats a lot of chicken *wink wink*! We’re still working on the spinach issue though. tee hee.

I actually like to buy a whole salmon and cut it into steaks myself. Most times it’s less expensive to buy the whole fish. If you don’t like cutting yourself, you can always ask your fish monger (I just love saying that) to do it for you. For this recipe I had the skin removed, but if you like the skin, by all means, leave it on. Cooking times will vary so please watch your fish. It will depend on the heat of your grill & the thickness of your fish.

I like to serve these over a bed of fresh spinach, seasoned with s/p, that I’ve just sauted in a pan with a little butter (come on – have to squeeze it in there somewhere) until wilted. Couldn’t be easier & more healthy for you!

Salmon with Honey Mustard Glaze
What you’ll need:
Salmon Steaks (enough for your family)
1 1/2 tablespoons ground stone mustard
3 tablespoons honey
2 tablespoons unsalted butter – melted
salt/pepper

What to do:
1. Season Salmon filets with salt/pepper on both sides. Set aside.

2. In a small bowl, combine mustard, honey and melted butter. Stir together. Brush top of salmon filets with glaze mixture. Place steaks on medium – hot grill. Cook for 3-4 minutes (depending on the thickness of your filets) Brush glaze mixture on to the other side of filets. Cook 3-4 minutes until salmon is a nice orangishy color and flakes with your fork.
