I know we’ve all had Chicken Salad before. Most I’ve had are heaping with mayonnaise (something I’m not a big fan of but can deal with in small amounts), chicken, and little else. Not mine! I can’t tell you how many people have asked me for this recipe after they have tasted this chicken salad. It’s very different & oh so refreshing with all of the fruit inside. I can always tell that they can’t quite figure out what that extra little flavor is. So I just blurt out, “The secret ingredient is CURRY powder!”

If you don’t want to cook the chicken just for the salad, you can also make this with leftovers from roasted or grilled chicken, OR you could even use 2 large cans of chunk chicken breast (drained of course).

It’s beautiful served on a bed of lettuce. Delicious in pita bread or served up on a toasted hoagie bun. Or if you’re like me just eaten straight out of the bowl - LOL! It’s even better the second day (if there’s any left) because the flavors have had a chance to get to know each other a little better!

If you happen to like mayonnaise feel free to add a little more, if you really like Curry powder go a little heavier on the sprinkling. If you prefer grapes throw those in as well! Either way you combine it, it’s the perfect addition to your summer menu!

What you’ll need:
3-4 chicken breasts - cooked & cubed (enough for your family)
1 apple - diced
1 small box of raisins
1 can of pineapple chunks - drained
1/4 cup mayonnaise
1 tsp. curry powder

What to do:
In a large bowl, add your chicken, apple, raisins & pineapple. Add mayonnaise & stir. Sprinkle curry powder on top. Stir together well. Refrigerate for 30 minutes prior to serving.

    Oh yummy! What a delicious idea to throw fruits in there. I’m with you, mayo just ruins things when there’s too much. I cannot stand “salads” dorwned in mayo: tuna, egg, chicken, pasta, potato… all perfectly lovely except for the globs of mayo, yuck!

    Curry is the best! And what beautiful pictures you take. Do you give lessons? Oh, and a tip about mayo based salads: use plain or flavored yogurt instead! Much lighter, better for you, and the yogurt adds a wonderful tang.

    This was so AWESOME! Very fresh and refreshing, very summery and easy for a nice hot night! I love the pineapples and apple together , i added some slivered almonds also. I shoulda took a picture , i usually do, maybe tomorrow with the left overs!

    Wonderful combo of flavors. I hadn’t added pineapple before and it was super. I used my leftover chix from Beer in the Rear last night. We ate EVERY morsel.

    Just put the salad in the frig. Cannot wait to try it after it has spent sometime blending!!!! I obviously tasted it before putting in there and it was divine. What a change from the same old same old… How beautiful this would be served on a leaf of spinach in a Martini glass….
