Zucchine Farcite {Stuffed Zucchini}

Zucchine Farcite is Italian for Stuffed Zucchini! Again, everything sounds so much better in Italian. It’s just the way everything rolls off the tongue. So poetic, so rhythmic, so…swoon! If I ever have to hear really bad news I’d like to hear it in Italian. Just sayin’.
Zucchini are an amazing little veggie & they’re in abundance right now. I have had stuffed zucchini so many ways. Once you get the basic recipe down the possibilities are endless.

Ah another Fabulous Italian dish! Funghi {foon-gee (as in gee like geek)} Gratinati, is so much fun to say! Italian for Mushrooms au Gratin! or Simply FAB FUNGHI! This is by FAR one of the BEST mushrooms dishes I have EVER had, if not THE best…Can I just say MMMMMMMmmmmhhhh! I know that’s not technically an adjective or description but it’s spot on!
I am going to have to make a double batch of these next time. No question about it. They didn’t last five minutes at my dinner table and I could have eaten the entire dish by myself. Yes, seriously the WHOLE dish! It’s that good ppl. If you like mushrooms then you MUST, you simply MUST try this.

I am crazy for chicken thighs lately! Perhaps I purchased way too many of them at my bulk store. I’ll never tell, but this Pollo al Rhum {Italian for Chicken with Rum} is one amazing recipe & makes me happy I had them on hand. If you’re tired of the same old, same old chicken, you should try this out. Also equally fab is last week’s Galletti alle Olive. You should buy the thighs in bulk & try that one as well – just a thought!
In this penny-pinching season chicken thighs are a blessing. (Yes, only chicken thighs – not thunder thighs – but I’m not going to mention those again!)

Week #15 in the Bread Baker’s Apprentice Challenge was Italian Bread…Ah I can hardly believe it’s been almost 4 months worth of fresh bread making…each week delivered right to my table by my own hands {& with LOTS of help from Marta of course}. Who would have thought I would be getting the hang of this baking thing? Def not me! Although I still don’t consider myself a baker – more like home cook extraordinaire – tee hee! I am def feeling much more comfortable with the likes of yeast, kneading, rising, windowpane test, ferment, etc. and I’ve definitely used my share of King Arthur Bread Flour & Yeast as well. I don’t dare try to count the bags. Seriously I’m going through those two like they were water. But nevertheless, I have wonderful bread each week.

Man, this is truly a dish that will knock your socks off (well, of course, not right now because we’re not wearing any because it’s smoking hot still here on the East Coast, but figuratively – oh yeah!)

I love dessert. (No surprise there with my wicked sweet tooth & I’m absolutely amazed to say that I am cavity free even with the insane amount of sugar I eat – tee hee.) I’m just not a big fan of slaving all day for it! Here’s where my turnover comes in!
This is one of the easiest desserts you can make. Blueberries are in season right now & are the perfect addition to this turnover but don’t feel you have to be limited to it. You could try peaches, strawberries, plums…oooh even cherries! Go ahead, get creative!

Week #14 in The Bread Baker’s Apprentice Challenge is French Bread! As I’m writing this, I’m noshing on some of this delightful bread dipped in Olive Oil (hopefully in the process, avoiding any sticky fingerprints on my laptop). All of this I do for you, of course, so that I may fully express in words the deliciousness that is homemade French Bread…ah mon cheri you see how much I adore thee? Tee hee.
I must admit that I now completely understand why Artisan bread costs so much at the bakeries or in the high end deli/bakery section of the grocery. If you don’t, you should just make some homemade yourself and you’ll know immediately what I mean. But with that said, I truly believe that putting the effort into homemade breads is worth the effort. As is the case with cooking in general. You get out what you put in! No?

Were you beginning to wonder if I eat beef? I have no idea why I have not posted a beef recipe on bell’alimento. Seriously, we ARE beef eaters! Really we are LOL! We eat beef at least once a week and yet I have neglected to post any recipes. Well we’re going to rectify that right now. Going to start off the beef category right with this recipe!
There’s something so satisfying about a big, fat, juicy, melt-in-your-mouth steak! & This is one of those! No wimpy steaks allowed here; you really need a super nice cut of meat. We went with the Ribeye. A thick 2″ one at that. We only cooked 2 of these babies for our entire family & it was plenty (thank goodness because lets just say they were ‘spensive!)

This time of year peaches are everywhere! And, as a good Georgia girl I felt it necessary to throw in a peach recipe. I always try to take advantage of the fruits & veggies that are in season & before these peaches start to fade away until next summer, I thought I’d share my favorite way to enjoy them! Grilled!
They’re incredibly luscious & juicy when you throw them on a grill (or grill pan, as in my case). You’re welcome to do these on your grill – I just like the ease & convenience of my grill pan. Plus, I seem to be able to control my grill marks a little better inside. *wink wink*

Keep this one away from the kiddies! This is NOT your normal morning Cappuccino! Oh no, there’s a reason I call it “Call a Cab Cappuccino!” It’s one kicked up Cappuccino alright (there are, after all, six different liquors in here, boys & girls)!
So go easy! It will be smooth going down so you’ll certainly want to have a few but pace yourself. They will most certainly sneak up on you & knock you on your bum.

I am NUTTY for NUTELLA! Seriously people, Nutella makes me nutty & I’m not ashamed to admit it. LOL!
I have been eating Nutella for over 20 years and never ever get tired of it and don’t imagine I ever will. Last month I posted my Strawberry Nutella Panino and was overwhelmed with the amount of love it received! So many of you commented, emailed & twitted with me about your love for Nutella! Hard to believe a little jar like that could contain such incredible, finger licking goodness (oh yes, you know you dip your finger in the jar too! LOL) isn’t it. All that love got me thinking.
So, I came up with an idea for a monthly Nutella posting to feed my Nutella habit & hopefully yours and The Nutella Challenge was born!
