Cipolle Vegetariane {Vegetarian Onions}

This is another Italian dish that can be made a multitude of ways. Cipolle Vegetariane is Italian for Vegetarian Onions! Yes, you read right – Vegetarian Onions! Don’t get excited, I am after all serving them with my Pepper Encrusted Steaks! But they are just as fab on their own. They smell so divine while cooking. What’s not to like: onions, mushrooms, bell pepper. Oooh! So good.
I will say that hulling out the insides can be a bit tricky. PLEASE wait until the onions cool down otherwise you’ll be fussing up a storm. I prefer to do my fussing in Italian so that no one in the house understands – tee hee. I’m also known to the do same thing while driving, but don’t tell! Don’t want to lose my Principessa status!

As with everything, if you particularly like mushrooms add some more & cut back a bit on the onions. If you like it more bread-y, add some more breadcrumbs. It’s for you after all! I think I might actually add in a little bacon next time around. Because after all, doesn’t bacon make everything better?
What do you like to stuff your onions with?

What you’ll need:
4 large white onions – as close to the same size as possible
2 heaping tbsp of bread crumbs
1/4 cup mushrooms – diced
1/2 cup grated swiss cheese
1 red bell pepper – diced
4 tbsp unsalted butter – melted
3 tbsp extra virgin olive oil

What to do:
Preaheat oven to 350 degrees. Put on a large pot of water to boil. Peel the outer skin off of your onions, put them into the boiling water & cook for 15 minutes. Remove onions from water & allow them to cool for approx 5 min.
Cut off the tops of the onions & discard. Hull out the insides of the onions & set aside. Careful not to cut the outside or bottom.
Roughly chop the portion of the onion that you removed. Into a saute pan add the olive oil & heat over medium-high heat. When the pan is hot add the onions, pepper & mushrooms. Season well with s/p. Stir, cover & cook for approx 10 mins. Stirring every so often. Turn off the heat & add the bread crumbs. Stir to combine.
Spray an ovenproof casserole with cooking spray. Place your onion shells into casserole & stuff with filling. Sprinkle the tops with cheese & pour over melted butter. Cover your casserole dish with tinfoil & bake for approx 50 mins. Allow to cool for a bit before serving.

This looks so delicious! It would be interesting to do a Mexican version of this meal- maybe use a red onion and stuff it with chopped tomatoes, a little lime juice and cilantro then top with avocado and cheese…mmmm. Great recipe!
