Risotto alle Peperone {Roasted Red Pepper Risotto}
I was so excited when Robin from MyMelange asked me to do a guest post. I’d had this recipe in my mind for quite some time & thought it would be the perfect time to whip it up.As you ALL know, I HEART Risottos. I have many on the site & many more planned (think squash next time). I met Robin on Twitter (@MyMelange) earlier this year and immediately hit it off. She’s one funny tweep not to mention she LOVES Italy.

Paula my very first risotto tasting was this and quite tasty. I am wondering have you ever made risotto with pumpkin or squash? I have a reason for asking *_*

Yum! I love making risottos, I made an asparagus one last week, the bright green was a nice pop compared to the mushroom ones I usually make. This recipe looks great, I love bright colors and adored red peppers.
I noticed there wasn’t any cheese listed for the ingredients, can you use a parmigiano reggiano to finish?
Ciao Julia! I am crazy for Risotto’s as well. I’ll be posting a Pumpkin Risotto this week! & Of course you can ALWAYS finish with Parmigiano Reggiano! That goes without saying here ; )
