Pollo alla Crema {Chicken with Cream}

Are you ready for some luscious chicken? Well if not, just turn away now. Because this is one lusciously delicious dish! Pollo alla Crema is pronounced Po-low ah-la Cray-ma and, yes, as the name implies it’s oh so creamy & wait for it….succulent.
It’s another low & slow dish that I was first introduced to while living in Northern Italy. The sauce…oh the sauce, it kills me everytime. So good. Please note, that you’re required to have some type of bread nearby to help you get every ounce of it into your mouth. Yes, required. I say so, so it must be true.

If you’re not a fan of a cutting up a whole chicken (you can always wink at your butcher & ask him nicely to cut it for you…not that I know this from experience or anything, just a mere suggestion - wink wink) or just prefer using thighs or leg quarters feel free. For the photo shoot I made it with leg quarters (because they were what looked good and what was on sale at the grocer that day). And as with every time I make this dish it’s ah-mazing no matter which pieces you use. Naturally if you use less chicken or smaller pieces adjust your cooking time accordingly. A whole cut up chicken was just the way it was shown to me. Also, if you can’t find any baby bella mushrooms (or if they’re a little pricey the day you get to the grocer) feel free to substitute button mushrooms.
I think I might be getting closer to my 100 chicken recipes…just sayin’… obviously I love chicken & hope you do to! Which always make me think of the Chick-Fil-A Cow & his eat more chicken mantra… Okay, maybe it’s only funny to me! LOL


What you’ll need:
1 whole chicken cut into pieces
10-12oz / 300g of Baby Bella Mushrooms - Sliced
1 cup of dry white wine
1 cup / 200g of Heavy Whipping Cream
2 egg yolks
4 tbsp / 50g of Unsalted Butter
2 tbsp of Extra Virgin Olive Oil
Handful of Parsley - roughly chopped
2 Bay Leaves

What to do:
Wash & pat dry your chicken pieces & set aside. In a large saute pan, add 2 tbsp of butter, bay leaves & 2 tbsp of Olive & heat over meadium-high heat. When melted add your chicken pieces and slightly brown on all sides. Turning as necessary. When chicken begins to turn a nice golden color, season well with salt & pepper & add in your wine. Lower heat to low, cover and let simmer for approx 60 minutes turning as necessary.
WHILE your chicken is cooking, slice your mushrooms. 20 minutes prior to chicken being done, add 2 tbsp of butter to saute pan and heat over medium heat. When melted add mushrooms, reduce heat to low. Season with s/p & cook for approx 20 minutes.
When chicken is done, remove it from pan, transfer to a plate & keep warm inside oven or toaster oven. Reserve 1 tbsp of cooking liquid.
Add the cream to pan, stir & allow to reduce by about 1/3. WHILE cream is reducing, place the egg yolks in a small bowl and season with s/p and add the reserved 1 tbsp of cooking liquid from chicken. Stir well. When cream mixture is finished reducing, remove bay leaves & take off heat & mix in egg mixture well. Add mushrooms with their liquid & stir well. Check for seasoning. Add s/p if necessary. Mix in chopped parsley.
Place chicken on serving tray & pour cream mixture on top. Serve immediately.
