Well it’s that time of year when the weather is cooler, which for me means it’s time to fire up that oven! Yes, it’s baking time! And, in addition to baking time, it’s holiday time! Which means you might be having guests stop by! Well, if you do, or just want to impress your family or friends this is the perfect brunch item!

Frittatona di Ciliege pronounced Free-ta-tone-ah d Chill-e-edge-ay is simply a big cherry frittata! Hold on, don’t click away…I know you might be thinking cherries in a frittata! Seriously, Paula, how much brandy did you drink? YES! Yes it does have cherries in it! BUT come on, be a little adventurous. Step outside of the box! I think you’ll be pleasantly surprised.

It’s the perfect mix of subtle, sweet and savory! Somehow the brandy-ladened cherries really work with the eggs! So go on, give it a whirl. I had this eons ago in Italy & was pleasantly surprised myself!

A few things to remember…you’ll want to be sure to whip the egg whites until they’re firm & have stiff peaks & then after all that hard work don’t just sling them together - GENTLY fold them in! Make sure you drain the cherries well. You don’t want too much extra moisture in your frittatona! & Don’t worry, if you don’t have any fresh cherries available, don’t sweat it, it’s a-okay to use the canned cherries (get the ones that are in water though & not heavy syrup)

What you’ll need:
300g of Pitted Fresh Cherries or Pitted Canned Cherries in Water
25g or roughly 4tbsp All Purpose Flour
25g or roughly 2tbsp of Unsalted Butter
5 tbsp of Powdered Sugar
4 large eggs
1/4 cup Brandy
3tbsp Milk
1 tsp Cinnamon
pinch salt

What to do:
Remove stems from cherries and place into small bowl. Pour Brandy over cherries & allow them to marinate for an hour. Slightly before cherries are done marinating Preheat your oven to 320 degrees.

Separate your egg yolks & whites. Into your mixing bowl, add the egg yolks & 3 tbsp of powdered sugar. Mix together with paddle attachment. Add in a pinch of salt, flour & milk. Mix well.

Into a separate mixing bowl, add your egg whites & whip with the whisk attachment until they form stiff peaks (this will take a few mins). Gently fold the egg whites into the egg mixture. Once your cherries have finished marinating, drain the liquid.

Butter an ovenproof dish & then place the cherries onto the bottom of the dish in one layer. Pour the egg miture ontop and bake for approx 30 mins or until mixture has set. Into a small dish add remainder of powdered sugar (2tbsp) & Cinnamon. Mix together & dust the top with sugar mixture.
