Did you LURVE those Chocolate Truffle Brownies that Susan of Doughmesstic did for us earlier this week? Of course you did, what’s NOT to love, They’re ooey gooey chocolately truffly squares of deliciousness! Okay I’m trying to focus, but it’s so hard thinking about Chocolate (you know I’m weak)…

Well I’m returning the favor for Susan with a guest recipe on her site. It’s Petti al Mascarpone or bettah known as {Chicken Breasts stuffed with Mascarpone Cheese} Mascarpone is simply Italian Cream Cheese and it’s like no other! The dish is pronounced Pet-e all Mass-car-pone-eh (Brava/o) So moist, juicy & lip smacking good. You know we love some Chicken here on bell’alimento… These are stuffed with Prosciutto (ah, glorious Prosciutto), sauteed Mushrooms, herbs & Mascarpone! They look so fancy, they’ll think you slaved in the kitchen, & I won’t tell them you didn’t!

I served mine over a bed of RISOTTO I got so carried away smelling this dish I forgot the veggies (oopsy) but I think they’d be great with some steamed green beans (maybe with bits of Prosciutto in them - WHAT? Prosciutto makes everything bettah LOL!)
