Yes it’s time for another chicken recipe! In my quest for 101 perfect poultry recipes I’m adding this one to the category! It’s amazing what you can do with chicken! Simply amazing. No more boring chicken ruts! Nope, not gonna happen on my watch ; ) This one will make your tummy & your pocketbook very happy!

Pollo in Salsa di Mandorle is the newest addition to our poultry files! Pronounced Po-low in salsa d Man-door-lay is Chicken with Almond Sauce! Italians as with everything in my humble opinion (& we all know that I’m right ALL the time ; ) LOL Just ask my family, they’ll tell ya ; ) teehee ) know how to dress things up & food is no exception!

You can pick up a small bag of almonds in your baking section (1/2 cup bags) normally for well under $2! A steal for anyone who knows how much nuts cost!! I mean I’m thinking I need to  plant some trees or something. Have you seen the price of nuts lately? Cray-zay high! And you can purchase a family package of thighs (which makes 3 meals in my house) for around $7! Rest of the items are pantry items & should already be in your casa ; ) Top to bottom this can be made in around 35ish mins.  My kinda meal!

What you’ll need:
4 bone in chicken thighs
1 onion - sliced thin
4 tbsp unsalted butter
1 clove of garlic - crushed
juice of 1/2 lemon
1/4 cup of almonds - crushed
1/2 cup white wine
s/p
Handful flat leaf Italian Parsley - roughly chopped

What to do:
Pat your chicken thighs dry with a paper towel. Season with s/p. Into a large dutch oven place 2 tbsp of butter & melt over medium-low heat. When melted add the chicken & brown well on all sides. When chicken is nice & golden browned. Add the lemon juice, reduce heat to LOW, cover & cook for approx 15 mins. Remove chicken & keep warm. Add an additional tbsp of butter & saute the onions & garlic. When translucent add in the almonds & cook until slightly brown. Add the final tbsp of butter & wine & allow to reduce. Check for seasoning & add to taste. Remove & discard garlic clove. Return chicken to pan & spoon almond sauce on top. Garnish with parsley.

    We use chicken thighs quite often at our house - both for the price and the moistness of the meat. This looks like a fantastic sauce and I’m looking forward to adding it to my repertoire.
