Pollo alla Birra {Chicken in Beer}

Bok Bok Bok Bok! Yep it’s chicken time again! Don’t act surprised. LOL You know I’m on a mission! Plus, I bought a few HUGE family packs of  thighs & well I have to put them to good use! Up this time … it’s Pollo alla Birra {Chicken in Beer}. I’m not a beer drinker, I’m sure I’ve mentioned that before. You know I’m a wine girl myself.  But this  really doesn’t have an overwhelming BEER taste in it. Trust me, if so I wouldn’t be eating it. I know it calls for TWO whole cans of beer. Yes, it does. But it cooks down for like an hour people and reduces into this beautiful amazing sauce!

It’s chock full of veggies too! You’ve got carrots, onions, celery & leeks! Yes, LEEKS! If you’ve never tried them you’re in for a treat. You’ll find them in just about every grocery these days. Trust me if my local grocery carries it in my dinky little, ehem I mean charming little town yours will too! But heads up, you only want to use the white portion of the Leek. You can discard the rest (which yes is a large portion, but if you’d like to hang onto it you can use it to make homemade veggie stock, just a thought)

This is a meal you can throw in your dutch oven & let it just cook away all by it’s little lonesome! Come back in a bit & you’ve got a fantastic meal! Now how’s that for easy peasy!

Pollo alla Birra {Chicken in Beer}
What you’ll need:
4 tablespoons unsalted butter
4-6 chicken thighs – bone in
1 garlic clove – crushed
1 carrot – minced
1 small red onion – minced
1 celery stalk – minced
1 leek – minced
2 cans or bottles of a light colored beer
salt/pepper

What to do:
1. Into a large dutch oven, melt butter over medium heat. Pat your chicken thighs dry, season with salt pepper. When butter is melted, add chicken to pan and brown well on all sides.

2. Once chicken is golden brown, Add garlic, carrot, onion, celery and leek to pan. Pour in beer and season with salt pepper. Reduce heat to LOW and allow to cook for approx 50-60 mins until beer has evaporated and reduced into a sauce. Turn chicken a few times during cooking. Remove garlic clove & discard.

    Bok! Bok! Bok! I love the look of all those veggies! Leeks are one of my faves too, so you’ve made me ultra happy with this one. I’m on pins and needles waiting to see what you do with the rest of those thighs!

    Yum… looks tasty! I actually have some beer in the fridge to use up. Neither hubs or I are big beer drinkers… we prefer wine, as well. We should know better than to buy it because it always sits in the fridge. Now I have the perfect use for it!
