Arancini alla Siciliana {Sicilian Croquettes}

Arancini alla Siciliana are a luscious crunchy & creamy little round treat! It simply translates to Sicilian Croquettes {or as I like to call them…just rice balls} They can be enjoyed as an appetizer {just make them a tad smaller} or as a full meal and depending on where in Italy you eat your Arancini the fillings vary as well. The ones I’ve prepared here are oozing with fresh melted Mozzarella and incredbily flavorful beef! *swoon*

You can make them with a fresh pot of rice or they’re perfect if you have LEFTOVER {hello love that} rice or risotto on hand. Another huge plus, they can be made well in advance if you’re having them for a dinner party. You’ll just need to pop them out of the fridge, bread them and fry them right before you’re set to enjoy them! Frying times will naturally depend on the size of your Arancini but it’s completely Easy peasy! My kind of entertaining.

    I’ve also seen arancini dipped into breadcrumbs before frying — this gives them great texture and crunch!

    I like how these have a dim sum look to them…Italian dim sum…hmmm…doesn’t sound bad!

    I always make extra risotto so that we can make a batch of arancini the next day, preferably packed with mushrooms and a piece of oozing, fresh mozzarella. I will be sure to check out your recipe on Rachael’s site.

    I just made these and they were incredible !! I did at some very thinly sliced garlic and some green peppers into the meat and onion flavor because I love extra extra flavor :) thanks again for a great recipe, paula !
