Gnocchi con Sugo di Pomodoro {Gnocchi with a light Tomato Sauce}

Gnocchi Gnocchi Gnocchi! It’s just fun to say, isn’t it ; ) They’re little pillows of potato goodness! And when done right, they’re light, creamy & luscious! Yes, I said LIGHT! It’s not something I make all the time, so I like to make a big batch {and this would be a big batch}. I cook half immediately and freeze the rest for another day. You’ll want to as well, trust me, you’ll thank yourself ; ) It’s fantastic to pull a bag of homemade gnocchi out of the freezer when you need a quick dinner! No fuss, no muss!
Pomodori a Sorpresa {Tomatoes with a Surprise filling}

This is a quick an easy summertime appetizer! Pomodori a Sorpresa means tomatoes with a surprise! Who doesn’t love a surprise right? Well, me actually LOL! I’d much rather know! SO I’m going to go ahead and ruin it for you {sorry} the surprise is the filling inside, which is a warm, gooey, melted hunk of Mozzarella. Ah, yes Mozzarella! I’ve actually starting referring to this as fried Caprese Salad! Go ahead, tell someone you’re serving Fried Caprese Salad, I’m sure it will pique their interest ; )
Gelato al Melograno {Pomegranate Gelato}

I love summer time. I love the long days, throwing our normally way over scheduled schedule out the window, and kicking back with GELATO! Yes, I could make it everyday {and sometimes we do LOL} My Cuisinart maker is getting quite a workout this summer! She’s one kitchen gadget that has been worth every penny! I might as well just leave her out on the counter she gets used so often ; )
Ziti al Prezzemolo {Ziti with Parsley Sauce}

This is a quick and easy pasta dish that’s perfect for warmer weather! It takes all of about 8 minutes to pull together. Pretty much in the time it takes you to cook your pasta to al dente perfection you’ve got your dish complete. It’s fantastic for lunch or as a light dinner!

Gazpacho

Hello you tall, dark, COOL drink of…veggies! I know right, but yes VEGGIES! I wish I could tell you that I love vegetables more than I love carbs but hey it’s just not so {you’ve seen all the pasta recipes here LOL}. BUT this is changing my mind and it’s perfect for summertime! It’s cool, refreshing and ridiculously tantalizing on the tongue.
Bavarese al Melone {Bavarian Cream with Melon} + a {GIVEAWAY}

As the temperatures RISE, fruit desserts are replacing the heavier BAKED desserts in our house {oh don’t worry, they’ll be back, they’re just on vacay LOL} Cantaloupe are everywhere right now. They’re not only beautiful to look at they’re incredibly juicy, sweet and versatile ; )
Ravioli alla Ricotta e Spinaci {Spinach & Ricotta Ravioli}

Who doesn’t love little edible pillows filled with creamy goodness {aka Ravioli}? You can fill them with just about whatever your heart desires. And yes even though I could eat them in their natural naked state and be quite content, my favorite way is to drizzle them with the most simple of sauces – a butter and sage sauce! Yes, that amazingly aromatic butter sauce so silky it just slides right over your tongue! mmmh swoon! Yes, food is sexy people! I keep telling you this! LOL
Prosciutto e Melone {Melon wrapped in Prosciutto}

This is the quintessential Italian appetizer to me. It’s just amazing and I never tire of it. I always get a little giddy when melon season is upon us because I KNOW it’s time for Prosciutto e Melone! The sweet cantaloupe, the sexy and salty Prosciutto, the tang of the mint and then the balsamic. Mamma Mia!
Gelato al Kiwi {Kiwi Gelato}

Ah, sweet summertime! So along with the blistering heat that we’re already experiencing here in the South East comes the need for all things cold and refreshing! And that of course means GELATO! Yes, go ahead and prepare yourself for the barrage of gelato and sorbet recipes that are going to be coming your way. It’s inevitable!
Fettucine Profumate {Aromatic Fettucine}

You all know how much I love a nice plate, bowl or hey I’d even eat it in a cup LOL of PASTA! It satsifys me down to my soul. And when you add a creamy luxurious MUSHROOM sauce just *swoon* I know, it doesn’t take much LOL. This dish is NO exception. It’s full of veggies too so no need to feel guilty about indulging. Not that I ever feel guilty about it though : )
Ricotta

Now that we’ve conquered Mascarpone it’s on to RICOTTA! Dare I say, this is even easier than the Mascarpone! I don’t think I’ll ever be buying either one of these cheeses at the store again LOL. Who knew! It’s so SIMPLE! And the taste, oh my GOODness! It’s so ah-mazing warm from the sieve, oh my oh my! Yes, you know I couldn’t resist taking a litte taste test!
