I made this for a Friday overnight event. Ended up being the wrong group to try this out on. One person out of about 15 had ever tried or heard of gazpacho. I really like it and the other lady that had tried it before liked it. I find it very refreshing and I’m not sad that I have the leftovers for myself! I got basically 3 different types of responses…. would be good with some chips, the texture is weird, they don’t like tomato juice/soup.

At least now, if it’s ever offered somewhere, I’ll know not to be afraid of ordering it. And I loved how easy this was to fix.

I love gazpacho (well, guess it’s cause I love tomatoes) but had something very interesting the other night…basically a bruschetta flavored cold tomato appetizer. Very similar ingredients but in lieu of the pepper my guest had included basil and parmesan for flavoring and a bit more olive oil; serving it with slices of baguette on the side instead of underneath – Bet you would love it too!

How sad is it that I have never tried gazpacho. This might just be the recipe that gets me initiated into the club. So what is the etiquette if they are sooooo good and one shooter is not sufficient? Do you present one per person and that’s it or do you put out more than that?
