Deconstructed Italian inspired Banana Split

I’ve gone bananas…Some of you might be saying GONE ; ) LOL I’ve gone bananas for BANANA SPLITS and it’s for a VERY great cause! Foodbuzz is having a banana split showdown of sorts. For every banana split posted by a Featured Publisher by Friday the 16th at 12:00 noon PST, Foodbuzz will donate $50 to The Ovarian Cancer Research Fund {OCRF} They will also choose NINE just NINE winners from all of the submissions and those NINE elite splits will be featured on the Foodbuzz Top 9on Monday July 19th {no pressure or anything right LOL}

So what to do, what to do…Well I had some Pepperidge Farm Puff Pastry in the freezer, Bananas that were super ripe and you know this was coming, NUTELLA! And with that I developed my plan for a deconstructed Italian inspired banana split.

You can’t have a banana split without ice cream right ; ) Nope! So I started on a batch of vanilla gelato this morning. Once that was ready to go and sitting and looking pretty in the freezer I mashed the ripe banana and put it onto the pastry sheet and added Nutella *swoon* and baked it until it was golden. For the toppings, I whipped up some fresh whipped cream {if you like it sweeter feel free to add more sugar} and added some Frangelico for a little extra something something.

Then it was time to put it all together! The golden puff pastry filled with warm gooey banana Nutella goodness was the foundation for our split. We added a few scoops of our vanilla gelato, drizzled over some caramel sauce topped it with the Frangelico flavored whipped cream and then because we couldn’t stop there, oh no, we sprinkled on some toasted hazelnuts…

Swoon! These are very filling and could easily be shared {if you’re filling generous that is ; ) }

What you’ll need: {Makes 3 deconstructed banana splits}
1 sheet of Pepperidge Farm Puff Pastry – thawed
1 ripe banana – mashed
3 tablespoons Nutella
1 egg – beaten
vanilla gelato/ice cream – 6-9 scoops
3 tablespoons caramel sauce
3 teaspoons hazelnuts – chopped & toasted
1 pint heavy whipping cream
2 tablespoons sugar – {more if you like it sweeter}
1 tablespoon Frangelico
fresh mint sprigs – optional

What to do:
1. Make your gelato ahead of time and keep in freezer until you’re ready to serve.

2. Preheat your oven to 350 degrees. Take your thawed puff pastry sheet and cut it into three equal sections. Add roughly 1 tablespoon of mashed banana to one side of the square and spread it with the back of a spoon. Top with a tablespoon of Nutella. Lightly brush the sides with your beaten egg wash. Fold the puff pastry on top of itself and seal tightly. Continue with additional 2 squares. Lightly brush the TOPS of the pastry with egg wash.

3. Place pastries onto a cookie sheet lined with parchment paper or a silpat mat. Bake for 20-25 minutes or until golden brown and puffy.

4. WHILE the pastries are cooking, place the heavy whipping cream into your stand mixer bowl {best if chilled} add sugar and Frangelico. With your whisk attachment mix on medium- high speed until your whipped cream has formed.

5. Place your chopped hazelnuts into a pan and toast them over medium heat.

6. To assemble your splits. Place the cooked puff pastry onto the serving plate. Drizzle caramel sauce on top. Add desired scoops of gelato/ice cream. Garnish with whipped cream, toasted hazelnuts & fresh mint.
