Zucca al Forno {Baked Squash}

Butternut squash are quite odd looking but are incredibly tasty! One goes a long way. They are after all HUGE. When in season, you can find them in almost every produce market and obviously with their size they’re not hard to miss ; ) If you’ve never cooked with them, what are you waiting for, not only are they good for you  they’re just plain GOOD!

Butternut squash are a type of winter squash and have a sweet nutty taste and the most amazing beautiful deep orange color! They can be a little tough to slice so be prepared to use a little muscle. Because they’re on the tough side, we bake them off for a bit beforehand to soften them up a bit! Easy peasy. And if you happen to forget to PEEL them beforehand {I like my OXO Serrated Peeler} no worries, you can take a pairing knife and run it round the edges after they’ve come out of the oven before you place them into the casserole. Don’t ask me how I know this ; )

Grana Padano lends an amazing flavor to this dish. It’s quite a fantabulous cheese and one should you have in your cheese repertoire if you don’t already. I grate it with my handy dandy MICROPLANE, which I can’t live without and I think every kitchen should have at least one. If you can’t find Grana Padano in your area check Sams Club. I get ALL my Italian cheeses from Sams Club. Not only are they generously sized wedges {I go through a lot of cheese} you simply can’t beat the price!

Zucca al Forno {Baked Squash}
What you’ll need:
1 large butternut squash – peeled and sliced into rounds
5 tablespoons unsalted butter – room temperature
1 cup Grana Padano – grated
salt

What to do:
1. Preheat oven to 400 degrees.

2. Spray a rimmed baking sheet with cooking spray. Place squash rounds onto baking sheet. Cover with aluminum foil and bake for approximately 30 minutes.

3. Spray a casserole dish with cooking spray. Carefully place a layer of squash rounds into the casserole dish. Season with salt. Add a few knobs of butter and a sprinkling of cheese. Continue until all layers are complete. Bake for approximately 15 minutes or until squash is tender and cheese has melted.

    I grew up watching my mom eat oven-baked butternut squash with loads of melted butter but I didn’t fall in love with squash until much later and as a dessert. But living in Italy where we ate sweet & savory squash in ravioli turned everything around. This dish brings back those fabulous flavors. Delicious!

    We here in Australia refer to Butternut Squash as pumpkin. It comes in many varieties, Butternut being one of them. It’s pretty much a staple of our every day meals. Roasting it is one of my most favourite ways of eating it. Use it roasted in olive oil and garlic for risottos, warm roast vegetable salads, pizza toppings. Bellissimo!
