Fried Spaghetti Pizza

Squeeeeeee! We’ve made it through to challenge 5! Thank YOU ALL so much for your votes and support! I’m quite excited about this next challenge. We were tasked with remixing a recipe, and that recipe is PIZZA! Yes, the iconic pizza. One of the most beloved amazingly delicious foods on the planet {at least in our house
}

You already know that Pizza Margherita is my all time favorite pizza so that was a natural choice. I didn’t have to think twice about WHAT pizza to remix. But what to do with the remix was a little more challenging.

Our guidelines were that the “pizza” must contain a base, a sauce and at least one topping. My wheels were turning and I suddenly remembered an after school snack that we used to have in Italy that would fit the bill nicely….FRIED SPAGHETTI. Yes, I said fried. Don’t knock it until you’ve tried it! It’s ah-mazing. Crunchy on the outside and creamy on the inside. And once cooked it can be sliced! Just like a PIZZA!

The fried spaghetti would serve perfectly as our “pizza” base and bonus it already includes the sauce. YES the sauce is already in the spaghetti. You see, the fried spaghetti is made with LEFTOVER spaghetti. Genius right ; ) Waste not want not. Even the smallest amount of leftover spaghetti can be made into a delicious and quick treat!

You can make small personal “pizzas” or a larger family style “pizza” depending on the amount of leftover spaghetti you have and of course the size of the frying pan you use.
This couldn’t be easier to prepare. Takes about 10 minutes tops. Just be CAREFUL when flipping the spaghetti, there still could be oil in the pan and you don’t want to ruin your clothes {nasty oil stains} OR worse burn yourself!

Fried Spaghetti Pizza Margherita
What you’ll need:
3 tablespoons extra virgin olive oil
1/2 pound leftover spaghetti {leftover meaning it has been coated in the sauce of your choice}
4 ounces mozzarella cheese – sliced
2 roma tomatoes – sliced
4-6 fresh basil leaves
What to do:
1. Into an oven proof frying pan add 2 tablespoons oil and heat over medium-high heat. Add spaghetti and press down with a spatula. Allow spaghetti to cook until golden brown.
2. CAREFULLY place a plate over the top of the spaghetti and with an oven mitt or kitchen towel invert the plate {there could be remaining oil and you don’t want to burn yourself or ruin your clothes
}. Add the remaining tablespoon of oil to the pan and return spaghetti to pan. Press down with spatula and allow to cook until golden brown.
3. Preheat oven broiler to high. Arrange sliced mozzarella onto spaghetti “pizza”. Add tomatoes and place under broiler. Cook until cheese is bubbly. CAREFULLY remove from oven and garnish with basil leaves.

wow this sounds great. We always mix our noodles and sauce and never thought of eating it leftover any other way. Will try this next week when I do spaghetti again. Sounds so tasty!!
Wonderful!!! This totally reminds me of weeknight dinners my Italian Grandmother would make for us…. leftover spaghetti pan-fried with olive oil, homemade marinara, garlic, parm and often topped with mozz…. it was crispy and delicious! I thought of that memory before I read about your after school snack memory! It s the best isn’t it!?
