Project Food Blog: Video 411

I’m bubbling over with excitement. We’ve made it such a long way and again we couldn’t have done it without YOUR love and support so THANK YOU, each and every one of you! I’m truly honored to be standing amongst such a great group of food bloggers, they inspire me and amaze me on a regular basis. Okay, before I start bawling all over my keyboard let’s talk about this next challenge..The let’s get Paula completely out of her comfort zone challenge…

Our Challenge #7 {yes that is 7 out of only 10 so no pressure right} Prompt was to “Channel your inner Julia Child and put one of your favorite recipes on film. Pick a recipe from your blog archives and make it come to life on video by showing readers the perfect way to poach an egg or just how passionate you are about seasonal ingredients. Keep your video under 5 minutes for maximum impact.”

Okay so let’s just first mention that I’ve NEVER EVER NEVER EVER made a cooking video *exhaling loudly* So I’m not going to lie, I was INCREDIBLY nervous going into this challenge. But hey, I guess that’s why it’s called a challenge right ; ) The goal was after all to take you out of comfort zone and to stretch you to your limits. Check and Check.

First up was to decide WHAT I was going to DEMO for YOU my sweet, kind, love me no matter if I look like a deer in headlights on video friends ; ) I toyed with a gazillion ideas but ultimately had to go with my FAVORITE pasta dish of all time….Spaghetti alla Carbonara…My passion for this dish is blatantly obvious so without further a dieu… LIGHTS {inside my kitchen}, CAMERA {a flip video purchased just for the occasion} and ACTION…

So there you have it. The good, the hopefully not so bad *wink wink* video DEBUT. I know you’re going to want to make this incredibly tasty dish that continues to set my taste buds a flutter…you can find the recipe for SPAGHETTI ALLA CARBONARA HERE.

    Thank you, you just made me think back to one of my favorite moments in Rome, eating carbonara after visiting the cappella sistina. I love this dish and you made it look so easy!

    Very nice. However, you stated that pancetta is smoked pork belly. It is NOT smoked.

      Uffa…Thanks for letting us know Lynn. I DO know that Pancetta is salt cured. This was my first video & I was a nervous wreck. I was SO focused on saying that the pancetta was NOT smoked that I wound up saying it was after all…Crazy nerves of mine. We’re going to see if we can get that edited out : ) Grazie!

    First, probably my favorite go to dish for those nights when I’m craving something delish and have no energy to plan or cook a big dinner.

    But more importantly…I’m with Rachael, you seemed so comfortable you should do more videos. Especially since I loved getting to hear you actually speak Italian!

    Had to check back in to let you know that I stopped and picked up pancetta today just so I could make this for our dinner. It was just as simple and quick to put together as you said, and DH and DS and I all enjoyed every bite (saved some for DD, too, who’ll eat later). They’ve asked for this dish to be put in our regular dinner rotation. That won’t be a problem at all, thank you!

    Hey good job Paula.. One thing I can’t believe a woman who loves to cook has an electric stove..I feel for you..but you did great and it made me want to make a big bowl of it myself. Brava

    You were great! I would recommend using more eggs though. For a lb of pasta two eggs is on the short side, I’d say at least three, if not four. After all, every noodle should be covered in egg!
