Pumpkin Cakes with Nutella Glaze

 

I’m not sure if this should be called a muffin, a cake, a cake-ette, or a cupcake. Nor am I sure if it should be considered a dessert or breakfast item. What I do know is that it’s incredibly tasty and I’d be happy to eat one morning, noon or night and under whatever name you’d like to give it ; 0

I always seem to have an extra can or two or three of pumpkin puree in my pantry. It’s one of those things that I seem to feel the need to stock up on. You never know when you’re going to get the pumpkin baking bug ; 0

This recipe makes me happy that I always have a can of pumpkin puree on hand. Now if you’re feeling froggy {and it’s in season}, you could absolutely use fresh pumpkin instead of canned. Just bake it and pass it through your food mill, blender, immersion blender, or food processor until it’s silky smooth!

Regardless of if you use the convenience of the canned puree or baking it yourself, you’ll love these muffins. They’re mini in size but they pack a mighty flavor punch. You’ll taste ever flavor note. From the zing of lemon zest to the crunch of the amaretti. You get it all in every bite.

I used my silicon muffin molds but you can absolutely use a regular muffin pan. They won’t have the cutie patutie tu-tu like edges but they’ll be oh so tasty none the less. If you’re anything like me {ehem Nutella-holic}, you might want to make up extra Nutella glaze. Because you’ll probably “spill” some of it into your mouth before it’s time to drizzle away ; )

Pumpkin Cakes with Nutella Glaze

What You Will Need:

  • 1/2 cup unsalted butter โ€“ room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 cup pumpkin puree
  • 2 cups all purpose flour
  • 1 lemon โ€“ zested
  • 10 amaretti cookies โ€“ crushed, divided
  • 5 tablespoons milk
  • 1 cup confectioners sugar
  • 1 tablespoon milk
  • 1 tablespoon Nutella

What To Do:

  1. Place butter and sugar into the bowl of your stand mixer and mix together until mixture is light and creamy. Add in eggs one at a time and mix thoroughly after each one. Add pumpkin puree, flour, lemon zest, 8 amaretti cookies and milk. Mix until well combined.
  2. Preheat oven to 350 degrees. Spray muffin pans/molds with cooking spray. Evenly distribute mixture into muffins pans/molds. Bake for approximately 35-45 or until it passes the toothpick test.
  3. Transfer muffins to cooling rack to cool. WHILE muffins are cooling prepare glaze. To a small bowl add: confectioners sugar, milk. Whisk together to combine. Add Nutella and continue whisking until smooth and creamy.
  4. Drizzle glaze over tops of muffins and garnish with remaining crushed amaretti cookies.

    Pumpkin and Nutella became a favorite of mine during Christmas this year. I made a bunch of pumpkin muffins that I would warm up and smother with Nutella for breakfast. So food! I love that you added amaretti cookies into and on top of the cakes. Sounds fantastic!

    I made this last night but made it in a bunt cake pan. My kids, 11 and 15, boys, with a very plan pallet loved it. The boy like the flavor of coffee so needless to say this was gone by the morning. Very very good and a touch of Nutella goes a long way on flavor. Pumpkin made the cake very moist.

    The pictures are absolutely wonderful. I’m so inspired (and so salivating) that I want to start baking right away! Too bad I don’t have any amaretti cookies at home.
    Just wondering – could I replace them with something else? Or will the recipe not work without them?
