No Bake Mini Nutella Cheesecakes with Strawberry Sauce

No bake might be two of my favorite words when it comes to desserts. You know I’m not the best baker in the world, so when something says it’s no bake it’s right up my alley. Then you add in mini spring form pans and Nutella. Well, I’m THERE.

These cutie patutie mini no bake Nutella Cheesecakes are rich and decadent. The recipe makes 4 individual servings but each one could easily be shared {told you they were rich and decadent and I don’t often volunteer to share my dessert}  If you don’t happen to have the mini spring form pans you could use one large one. I just happened to see the mini ones in Tar-jay in the Easter section and couldn’t pass them up {oh the plans I have in store for them ; )}


I was going for a Biscoff {you know those cookies Delta gives you in flight, the ones I always swipe ehem ask for extra of because they’re so stinking good} type crust so I used honey graham crackers. It was pretty close. And to finish we used a smidge of homemade strawberry sauce and fresh strawberries to garnish. Feel free to swap out the flavors and use what you like {or have on hand} I think blueberry or raspberry would be scrumptious too!

If you get these started early enough in the day you can enjoy them after dinner. Otherwise just let them set up overnight and have them for breakfast ; ) Oh don’t act like you’ve never had dessert for breakfast! I can’t be the only one whose done that ; )

What you’ll need: {Makes 4 – 4″ mini cheesecakes}
1 sleeve of honey graham crackers – {total of 9 whole graham crackers}
1/3 cup dark brown sugar
1/2 teaspoon ground cinnamon
pinch of salt
7 tablespoons unsalted butter – melted
16 ounces cream cheese – softened
2 teaspoons freshly squeezed lemon juice
3/4 pint heavy whipping cream
3 tablespoons Nutella
1/2 cup sugar
strawberry sauce to garnish

What to do:
1. Pulse graham crackers into your food processor until they are crumb like. Add brown sugar, cinnamon and salt. Pulse to combine. Add melted butter and pulse again until well combined.

2. Spray mini spring form pans with cooking spray. Equally distribute mixture between pans. Press mixture into the bottom of each pan. Chill until firm.

3. Once your cheesecake crust has chilled, Into your stand mixer, add cream cheese and lemon juice. Mix until soft and creamy. Add whipping cream and continue mixing until mixture thickens. Add Nutella, mix to combine. Add sugar and continue to mix until mixture stiffens.

4. Evenly distribute filling between pans. Chill a minimum of 3-4 hours or until firm.

5. Prior to serving, garnish with strawberry sauce {or sauce of choice}.

    I’ve heard of no bake cheesecakes before but never actually tasted one so I wonder, what’s the difference in the consistency?

    2nd – I think Social Tea Cookies (can be found in the supermarket) are very similar to those delta cookies you mentioned. That could be very tasty!!!

    I found you at Margaret’s. She bragged about your love of Nutella. I got introduced to the stuff on a raft trip, as a grown up no less. Can you believe I missed a whole childhood of that stuff?? But I’m making up for it by feeding it to my kids liberally.

    These look amazingly yummy. Then I saw how much cream cheese they had. Well no wonder! OK I’m trying ‘em. Do you think Vanilla wafers would work instead of grams?
