Caprese Salad Skewers

One of my favorite things I look forward to eating in the spring and summer is Caprese Salad. There’s something magical about a fresh from the vine, juicy red tomato, paired with creamy fresh mozzarella, basil and golden extra virgin olive oil. It’s positively swoon-worthy.

Well, I don’t have those fresh from the vine juicy tomatoes just YET but because I’ve been craving Insalata Caprese and I’m impatient, I decided to hurry things along.  I used beautiful cherry tomatoes and paired them with the smaller bocconcini {which are the small balls of fresh mozzarella} and of course basil. I skewered them which makes them the perfect appetizer and party food!

And you could even put them together well in advance of your get together and simply garnish them with the olive oil and salt/pepper just before your guests arrived. Easy peasy entertaining ; )

Insalata Caprese {Caprese Salad Skewers}
What you’ll need: {amounts will depend on #of skewers}
cherry tomatoes
bocconcini {small fresh mozzarella balls}
basil
extra virgin olive oil
salt/pepper

What to do:
1. To assemble skewers: place a cherry tomato, a ball of mozzarella, a basil leaf, and finish with an additional cherry tomato. Continue until all skewers are assembled.

2. Drizzle skewers with extra virgin olive oil. Season with salt and pepper.
