Arancini {Fried Rice Balls}

Fried food is some of the best food in the world. Period. Now before anyone gets all excited, I never said it was the healthiest of foods, just that it is some of the best food ; ) Everything in moderation right ; ) So are you ready for a fried phenomenon?  I must warn you though, these Arancini {fried rice balls} are utterly addictive. If you’re on a diet or cutting back on carbs {GASP} go ahead and save yourself, click away now ; )

But if you’re not or just splurging, you’re in for a treat. You’ll need a batch of risotto and a pair of elastic waisted pants might be a good idea too ; ). I usually make extra when I’m making risotto JUST so I have leftovers to make these. Trust me, once you’ve had them you’ll want to make them every chance you can ; )

They’re crunchy on the outside and creamy on the inside. If that wasn’t enough, they’re filled with fresh mozzarella cheese which oozes into your mouth when you bite into the rice ball. Yes, it’s totally and completely swoon worthy.

If you don’t happen to have any leftover risotto, fear not, you can always whip up a batch especially to make these. You’ll need to make sure the rice is cooled completely before getting started {otherwise you’ll have scrambled eggs when you add the egg to the risotto ; ) }

Suppli {Fried Rice Balls}
What you’ll need:
Risotto - room temperature
2 eggs – divided
8 ounces fresh mozzarella – cut into 1/2″ cubes
1 cup flour – or enough to dredge
1 cup breadcrumbs – or enough to dredge
vegetable oil – to fry

What to do:
1. Into a deep sided pan {or dutch oven} add approximately 2″ vegetable oil {or enough to fry}. Heat oil to 375 degrees.

2. WHILE oil is heating, into a bowl add 1 beaten egg and risotto. Stir to combine. Set aside.

3. Set up breading station with three shallow dishes. Add flour into 1st dish, place remaining egg into 2nd dish {beat egg} and breadcrumbs into 3rd dish.

4. To make risotto balls: Scoop approximately 1 tablespoon of risotto into your hand. Place 1 cube of mozzarella into center and shape into a ball {add more risotto if needed to cover mozzarella}. Continue until desired number of risotto balls are formed.

5. Roll completed balls in flour, then egg, then breadcrumbs.

6. Place breaded balls into hot oil {do NOT crowd pan, fry in batches if necessary}. Fry for approximately 2 minutes or until golden. Transfer balls to a plate lined with paper towels. Serve while still warm.

    Arancini is in the air, my dear! I don’t know what it is, but I keep encountering arancini (online, on twitter, in real life). I even made some not too long ago. It is SO good, and I just love how yours are oozing with mozzarella, just perfectly!

    Ok, so you know that feeling that you get when your cheeks clinched together because you ate something tart or saw something tasty??? That’s what just happened to me when I realized that there was cheese inside of these fried rice balls! This looks so delicious and sinful at the same time. I am thinking of a thousand different ways to make these. Like prosciutto and cheese or maybe some chives. YUM YUM YUM!

    growing up with 2 Sicilian parents, Arancini were a most coveted treat. My mom would stuff them with risotto, meat sauce, peas and cubed hard boiled eggs. They are still a treat and gathering with the family and grandchildren is a yearly event. Just found your blog today, and I am glad I did.
