Spaghetti with Olives & Lemon

Spring has SPRUNG! As it’s getting warmer and we’re spending more and more time relaxing and soaking up the sun {ehem okay that’s what I wish I was doing. Instead I’m busy running around like crazy is more like it} I find dinner time is sneaking up on me and I’m not as prepared as I’d like to be. SO what’s a girl to do…throw together a quick and simple pasta dish of courseĀ  ; )

Spaghetti with Olives & Lemon

I said quick and simple and I didn’t exaggerate. This is a 10 minute or less dish. That’s right ; ) All you do is cook the pasta {al dente please, nothing worse than a mushy overcooked noodle ; ) } and then add in the luscious lemon juice, meaty olives, a couple of glugs of golden olive oil, herbs and guess what you’re DONE. Dinner is served ; )

You probably have everything you need for this already in your pantry/fridge. And if you served it out of the pot you made it in, it’s a ONE POT WONDER {dishwashing hater here}, hey I can’t be the only one who serves out of the pots/pans now can I ; )

Spaghetti con Olive e Limone {Spaghetti with Olives and Lemon}
What you’ll need:
1 pound spaghetti
salt
1 cup black olives – pitted, halved
juice of 1 fresh lemon
1/2 cup extra virgin olive oil
handful fresh basil – roughly chopped/torn
pepper

What to do:
1. Place a large pot of salted water onto boil. Cook spaghetti until al dente. Drain, transfer to serving dish.

2. Add olives, lemon juice, olive oil, salt and pepper. Toss to combine. Garnish with basil leaves.

Buon Appetito!

      Tee hee, actually that was a Tar-jay purchase, last summer I believe. Set of 3 fabu black/white bowls. I’ve decided the blog needed some color ; )

    I’ve been looking for recipes with black olives as an ingredient lately and this looks yumm-eee! I have to admit I’m guilty too…I will serve out of the stovetop pans anytime I get a chance. LOL!

    One of our favorites, had tried so many recipes in my time, this one is about as perfect as it gets, we make it the same way just love the olives! We use three different kinds…… lovely presentation here!

      Thanks Kayla! My son is gluten intolerant so we keep lots of gluten free pastas in the house and just swap his out as well : )
