Scaloppine di Pollo {Chicken Scaloppine}

Need something delicious on the table in 30 minutes or less? This is your dish. It’s fast and flavorful. The key is using thin cutlets, and the secret is in the sauce. It’s a thick and rich sauce that clings to the chicken cutlets like they just met and can’t get enough of each other ; )

You can use a white wine in place of the chicken stock if you’d like. Just let it reduce properly. Or you could even use a combination of both wine and stock. I have done both and honestly it depends on what I have on hand as to what I do the night I’m cooking. You know I’m a firm believer in using what you have in your pantry and it’s nice to have options isn’t it ; )

I like to serve mine over a bed of fresh spinach, but I wouldn’t turn it down with a nice bowl of pasta or a bowl of risotto ; )

Chicken Scaloppine
What you’ll need:
2 tablespoons extra virgin olive oil
1 pound chicken cutlets
salt/pepper
1 small onion - sliced
2 cloves garlic – minced
1 1/2 cups chicken broth
1/2 cup heavy cream
3 tablespoons chopped fresh flat-leaf parsley
What to do:
1. Into a deep side pan add olive oil and place over medium heat. Season chicken with salt and pepper. Cook chicken until golden and cooked through. Approximately 2-3 minutes per side. Transfer chicken to serving plate and keep warm.
2. To the pan add: onion, garlic and cook until tender. Approximately 3-4 minutes. Deglaze the pan with the chicken stock. Cook until the stock has reduced by half. Reduce heat to LOW and allow sauce to continue thickening.
3. Once thickened, add cream and season with salt, and pepper. Stir to combine. Return chicken to pan and allow to simmer just for approximately 1-2 minutes.
3. Garnish with parsley and serve immediately.
