Cook for the Cure: Fresh Beet Pasta

Those that know me, know I love PINK. And if it’s pink and sparkly ding ding ding. Love it even more. And if it’s pink and for a great cause. Swoon! Well today we’re going pink and it’s definitely for a great cause. I’m honored to help spread the word about COOK FOR THE CURE. If you’re not familiar, “Cook For The Cure, it’s a program that gives people with the passion for cooking a way to support the fight against breast cancer. Through culinary based fundraising, events, auctions and the sale of pink products, the partnership between Susan G. Komen for the Cure and KitchenAid has raised $8 MILLION in the past decade.” 
To do my part I wanted to cook something in honor of Cook for the Cure. I knew I wanted it to be pink and a pasta. Voila homemade fresh beet pasta. I used my handy KitchenAid appliances every step of the way. I have to confess that this was my first experience using KitchenAid pasta attachments for my KitchenAid stand mixer. I had previously only ever made pasta using my old school hand crank machine {which I love and I’m happy I know how to use} but WOW at how easy and quickly I was able to make pasta using the attachments. I’m smitten and will certainly be making fresh pasta more often I can tell you that !

Isn’t the color of the pasta gorgeous! I must tell you that it does lighten once cooked, making it more of a blush pink. I didn’t showcase a sauce today because it was all about the homemade pasta but a meat sauce would pair beautifully. And I have to tell you about that plate, it’s designed by Chef Jacques Pepin and it’s meant to passed on. My sweet friend SOMMER passed it to me and I will be PASSING THE PLATE too!

Fresh Beet Pasta
What you’ll need:
2 1/4 cups of all purpose flour {+ additional if necessary}
2 eggs
pinch salt
1/4 cup *roasted beet puree
*Roasted Beet Puree:
1 large beet – cleaned
2 tablespoons extra virgin olive oil – divided
1. Preheat oven to 375 degrees. Coat beet with olive oil. Wrap in aluminum foil and bake for approximately 1 hour OR until beet is fork tender.
2. Allow beet to cool. Place beet into food processor OR blender, add 1 tablespoon of olive oil and pulse until smooth. Note: Add more olive oil if mixture is too thick.
What to do:
1. Into your stand mixer place flour and make a well in the center. Crack eggs into the well. Add salt. On low speed mix until somewhat combined. Add beet puree. Continue mixing until a ball has form. Scrape the edges of the bowl as necessary. Continue until a ball has formed. NOTE: If mixture is too “wet” add additional flour. If mixture is too “dry” add more beet puree.
2. Switch to your dough hook and knead dough until it is tacky but no longer sticky.
3. Wrap your dough ball in plastic wrap. Transfer to refrigerator to rest for at least 30 minutes.
4. Unwrap your dough and cut it into four equal sections. Working with one section at a time. Flatten the dough slightly. Run the dough through the pasta attachment until it’s to your desired thickness {will depend on the type of pasta shape you are making}. Next cut it using the attachment of your choice.
5. Hang pasta to dry for approximately 5 minutes. To cook fresh pasta: Into generously salted boiling water add pasta and cook for approximately 2-3 until al dente. Drain. Dress with appropriate sauce.

I would totally love the Pro Stand Mixer, just because it’s gorgeous. I really NEED a new blender, though, so their 5-speed blender would be perfect. Our blender died on us one week ago, and I really need to get a new one. It’s hard to make smoothies without it.

I just wanted to add that I’ve made beet, spinach and carrot pastas before and they are heavenly with an alfredo sauce!

Great color, but I’m not a fan of beets
Do you have experience using other flours in this pasta? Whole wheat, spelt, quinoa, etc? This looks easy and delicious, I just picked about 6 large beets last night from my garden!
I have so many beets in my garden, the color and texture looks so appetizing!
