Baked Gnocchi with Two Cheeses

While I know it’s the middle of summer, BUT sometimes you just need a little comfort food even if it needs to go into the oven for you to enjoy it ; ) I just turn the air down a bit more that day. Gnocchi falls into that category. They’re little pillows of perfection to me. Darling delicious dumplings that are irresistible. They’re big on flavor and fill you up quickly. This baked version is no exception!

Baked Gnocchi with Two Cheese
What you’ll need:
16 ounces potato GNOCCHI
1 1/2 cups Bertolli Sauce
1/2 cups mozzarella cheese – grated
4 tablespoons Parmigiano Reggiano – grated, divided
1 tablespoon fresh basil – roughly chopped {additional for garnish if desired}
2 tablespoons bread crumbs
What to do:
1. Preheat oven to 425 degrees.
2. Follow my homemade GNOCCHI recipe or you can use a pre-packaged gnocchi and cook gnocchi according to package directions. Drain. Return gnocchi to pan. Add: tomato sauce, mozzarella cheese, 3 tablespoons Parmigiano Reggiano, and basil. Mix to combine.
3. Spray a 1.04 quart ovenproof baking dish with cooking spray. Pour/Spoon gnocchi mixture into dish. Sprinkle bread crumbs on top. Sprinkle remaining Parmigiano on top. Bake for 12-15 minutes until bubbly.
