Torta al Limone {Lemon Tart}

A s much as I want the cooler temperatures of fall I’m still not ready to give up the longer hours, the sun and the laid back attitude that summer has. Sadly I know I can’t have it both ways so I’ll just eat tart instead ; ) Specifically lemon t art! Lemon screams summer. It’s yellow, it’s happy, it’s got zing! I could be talking about myself right now {I realize I’m not yellow but my hair is at least that’s what my kids call it}

Because I was craving something sweet and tart and needed it quickly I took a short cut and used a refrigerated crust {gasp, hey I’m not a baker} you could absolutely make your own though. If you’re taking the quick route then you’ll be enjoying this tart in about 35-45 minutes. That will depend on how long you can wait until it’s cooled down enough to eat it without burning your tongue. Yes I burned by tongue. I’m impatient. What can I say.

Why couldn’t I wait? Well besides having a sweet and tart luscious lemon filling it has a whole stick of butter which makes it ultra luxurious.¬† But no reason to worry this end of the summer lemon tart is completely calorie free *wink wink*

Torta al Limone {Lemon Tart}
What you’ll need:
1 refrigerated pie crust
3 eggs
3/4 cup sugar
juice of 1 lemon
zest from 2 lemons
5 tablespoons butter – unsalted, room temperature
powdered sugar – to dust

What to do:
1. Preheat oven to 350 degrees.

2. Spray a tart pan with cooking spray. Place pie crust into tart pan, pressing so that it takes the shape of the pan. Set aside.

3. Into a large bowl add: eggs, sugar. Mix until combined. Add: lemon juice, zest and butter. Mix to combine. Pour mixture into tart pan.

4. Bake for 25-30 minutes. Place onto a cooling rack to cool completely. Once cooled you can serve at room temperature OR place in refrigerator to chill.

5. Dust with powdered sugar prior to serving.

    This looks wonderful and I love the simplicity of it. I need to get a tart pan one of these days. I’m not ready for summer to be over either…I could take some cooler temps, but I am not ready for the pool to close or the flip flops to be replaced by boots.

    Can I just tell everyone that this tart just gets better as it sits in the fridge. I wish I had made it for company because now I can’t quit eating it. It is incredibly delicious and light and not too sweet. This is one I will make many times.
