Ciambella {Chocolate Ring Cake}

Sometimes you just NEED cake and you want one that is not fussy or fancy just fantastic. This Ciambella {Italian for ring cake} is your answer. My poor tube pan has been quite neglected {probably because it was shoved into the back of my prop pantry out of sight} but when I spied it the other day I knew I’d be making this simple chocolate cake. I’m going to be putting the tube pan in with the other pans because I know I’ll be making variations of this again and soon.

Have I ever mentioned to you that I have a “THING” for pewter? Well I do, I have quite the collection of pewter ware. It’s not something I tuck away either. I use them all the time. They keep cold items cold and hot items piping hot. The only down side to pewter? You have to hand wash it…sigh. You should know by now that washing dishes is not up my alley but for pewter I’ll do it {not happily but I do it LOL} Which brings me to this FABU set of pewter measuring spoons.
I was tickled when the lovely folks at Crosby & Taylor contacted me to see if I would be interested in reviewing a set. You know how long it took me to respond, ehem a whole second. You see, I spied this beauties on Mrs. Paula Deen’s show, and on several of my favorite blogs. I have been drooling over them ever since.
Now they proudly sit on my counter top and I’ve used them every day since. And yes, even to make this cake

Disclaimer: Crosby & Taylor have provided me with a set of pewter measuring spoons to review. They have also provided a set of pewter measuring spoons to be given away to one lucky bell’alimento reader. My opinions expressed in this post are mine, always have been always will be.
Ciambella {Chocolate Ring Cake}
What you’ll need:
8 tablespoons unsalted butter – room temperature
1 cup sugar
3 eggs + 3 additional egg whites
pinch salt
1 tablespoon pure vanilla extract
2 1/4 cups cake flour
2 teaspoons baking powder
1/4cup cocoa powder
6 tablespoons milk
confectioners sugar – to dust
What to do:
1. Preheat oven to 350 degrees. Spray a tube pan with cooking spray with flour. Set aside.
2. Add butter, sugar into the bowl of your mixer. Mix until well combined. Add: salt, eggs and vanilla extract. Mix together until well combined.
3. Into a bowl add: flour, baking powder, and cocoa powder. Whisk together to combine. GRADUALLY add flour mixture to mixing bowl. Mix until combined. Add milk. Mix until combined.
4. In a separate bowl, beat your egg whites until they form stiff peaks. Gently fold mixture into batter. Pour batter into prepared tube pan.
5. Bake for approximately 35-40 minutes OR until cake passes toothpick test.
6. Dust with confectioners sugar prior to serving.
