Braised Pork with Rosemary and Mushrooms {Arrosto con il Rosmarino}
I could tell you how incredibly insanely delicious that braised pork roast is in the photo. OR how I used it to make not one but three meals. But I know you see that gorgeous cassis Le Creuset in the photo and you see giveaway in the title and now you’re heart is beating a little faster and you’re just not thinking clearly. It’s not your fault. It is Le Creuset after all. So I’m just going to get right to it. Christmas is coming a little early for someone. ONE lucky bell’alimento reader is going to WIN one of those for her {or him} self!
It’s a beauty, a 6 3/4 quart oval French oven. It holds A LOT and that’s a good thing for me because we have 5 people {plus one fur baby in our family} we need a workhorse. I braised a 4 pound pork roast in this beauty and there was still tons of room. I was able to get not one but three meals out of such a large piece of meat. Saving me time and money!
The first meal we simply sliced the gorgeous roast and served it with a potato gratin {recipe coming SOON}. For a second meal we made those gorgeous pork sliders with mushroom sauce, which were so good we ate them as a third meal too. The oval french oven is so versatile I KNOW I’m going to be using it often. So often, I’m going to just leave it on my stove.

Braised Pork with Rosemary & Mushrooms {Arrosto con il Rosmarino}
What you’ll need:
3 fresh rosemary sprigs – minced
4 pound pork roast – netted, or wrapped in kitchen twine
salt/pepper
4 tablespoons unsalted butter
4 tablespoons extra virgin olive oil
1 medium onion – roughly chopped
4 cloves garlic – crushed
1 1/2 cups dry white wine
6 ounces mushrooms – sliced
What to do:
1.Rub rosemary around roast and season with salt and pepper. Set aside.
2. Add butter and oil into 6 3/4 quart Le Creuset Oval French Oven, heat over medium-high heat. When melted, add roast and brown on all sides. Turning as necessary.
3. Add onion and garlic, and wine. Cook until wine has evaporated and reduced by half. Season with salt and pepper, cover, reduce heat to low and simmer until pork reaches internal temperature of 145 degrees. Transfer roast to plate/cutting board to rest.
4. Add mushrooms to sauce, increase heat to medium and cook for approximately 5 minutes.
5. Slice pork to desired thickness, serve with mushroom sauce.

OK. I could totally do a vegan version of this recipe. And there were so many incredible options on the LeCreuset site, but I had to go with the blue (SKU L2502-31). My daughter says it would go really well with our kitchen! Besides, cobolt blue is the color of the season…and I am nothing if not totally into the colors of the season!
