Chocolate Amaretto Panna Cotta

Panna Cotta is on of life’s simple pleasures. Next to Tiramisu it’s my favorite dessert. Once you have the basic recipe down the flavors are just about endless. In fact we’re well on our way to creating an entire category devoted solely to panna cottas. We’ve made: Pomegranate Panna CottaLimoncello Panna Cotta, Nutella Panna Cotta, and of course basic Vanilla Panna Cotta

Other than being insanely delicious the best part is that it will take you ONLY 10 minutes to make this and then you’ll pop it into the refrigerator to set up. It might be the most perfect dessert for parties because you can make this in the morning {or even the night before} and then forget about it. Leaving more time to decide on what wine you’ll be serving with dinner or what shoes will go best with your outfit ; )

Chocolate Amaretto Panna Cotta
What you’ll need:
2 cups heavy whipping cream
3/4 cup sugar
2 ounces Scharffen Berger Bittersweet Fine Artisan Dark Chocolate, 70% Cacao – Roughly Chopped
.25 ounce {1 packet} Knox gelatin
3 tablespoons cold water
1/4 cup Amaretto Di Saronno
fresh raspberries – to garnish, optional

What to do:
1. Prepare your custard cups/ramekins by spraying them with cooking spray. Set aside.

2. Place cream, sugar into a sauce pan and heat over medium heat. Stirring frequently with a wooden spoon. When sugar is well combined with cream add chocolate, continue cooking until it nears boiling. Remove from heat. Add Amaretto.

3. WHILE cream is cooking, into a small ramekin add cold water. Sprinkle gelatin package on top of water. Set aside.

4. When cream mixture is complete and while it’s still warm add gelatin mixture. Whisk together until well combined. Equally divide the mixture into your prepared custard cups/ramekins. Place in refrigerator to set up for a minimum of 2 hours OR until firm. To plate, run a blunt knife around the edges of the cups and the panna cotta should release easily. Garnish with raspberries if desired.

Buon Appetito!

Call me crazy, but I can feel the anxiety you had when unmolding these little cuties. I think it’s because I do the same thing too–hold my breath and wait full of anxiety for the sound of the perfect flop out of the ramekin!

I love amaretto–I have to have some!

I look forward to each new panna cotta creation from you! This one sounds DIVINE. I think we’re going to need to have this for dessert in the Fuji household this week… Or maybe I’ll accidentally forget to tell everyone I made it and just keep it to myself. Yep, I like that plan the best.

I have been known to sip amaretto and consume chocolate chips. This combines the two in a far more elegant way. :-)

hey cookettes, I use 1/2 cup sugar and whole milk rather than cream (less calories-still fabulous flavor)I never worry about using a cooking spray (just poison anyway)I set it in a fancy one serving martini glass and garnish. Everyone seem to lick them clean. I have made many diff flavors with liqueurs and once used a little instant coffee with tia marie for a coffee flavor.
