Cheesy Pancetta Panini with Rosemary {Panini al Rosmarino e Formaggio}

Bread, Cheese and Pancetta. What’s not to love right? Put it together and you have this small crunchy ooey gooey bite of bliss that’s been kissed with a smidge of rustic woody rosemary. Yes, it’s pretty fantastic and EASY. It’s a great snack, light lunch or an amazing appetizer.

This the season for parties after all and appetizers reign supreme. My secret for making these quickly and easily… Pepperidge Farm Artisan Rolls. There my secret is out. It’s a complete time saver, not to mention they’re unlike any other frozen bread product I’ve tried {and just for the record, Pepperidge Farm isn’t sponsoring this post I just happen to love their products. Period.}

You can pull these little beauties together in about 15 minutes. Cut them in half, add a decorative skewer and plate them up. Easy, effortless entertaining. That’s my motto!

Cheesy Rosemary Sandwiches
What you’ll need:
6 slices pancetta
6 Pepperidge Farm Stone Baked French Artisan Rolls
7 ounces Kerrygold Swiss cheese – sliced or grated
1 teaspoon minced fresh rosemary

What to do:
1. Preheat oven to 400 degrees.

2. Place pancetta {or bacon} slices onto a rimmed baking sheet and bake until crispy. Transfer to a plate lined with kitchen towels to absorb excess grease. When cool, crumble. Set aside.

3.  At the same time the bacon is in the oven, place rolls onto a separate baking sheet and bake for 10 minutes. Cut in half vertically.

4. Top bottom of rolls with a few slices of cheese, sprinkle with bacon and rosemary. Bake for approximately 5 minutes OR until cheese is melted and bubbly.

    Your food always looks so delicious. Pancetta makes delicious sandwiches but this one has to be the tastiest I’ve seen.
