Rossini – A Classic Cocktail

 

I adore Prosecco and think that bubbles shouldn’t just be reserved for special occasions. Besides sipping prosecco directly from my flute I also like to mix it up into cocktails. Besides the BELLINI one of my favorite bubbly based cocktails is the Rossini! It’s bright, festive and yes tickles your nose a little when you drink it.

This cocktail hails from Venice and is one of the most popular alternatives to the classic Bellini. It’s made with strawberry puree and Prosecco. That’s it. The cocktail is named after famed Italian opera composer Gioacchino Rossini, the author of famous operas such as The Barber of Seville. And now you know ; )

What You Will Need:

  • 16 ounces fresh strawberries - halved
  • 2 tablespoons sugar
  • 1 bottle Prosecco - chilled

What To Do:

  1. Into a small bowl add strawberries and sugar. Cover. Allow to macerate for approximately 1 hour.
  2. Place strawberries into blender {or use stick blender}. Puree.
  3. Spoon 2-3 tablespoons of strawberry puree into each glass. Top off with Prosecco. Gently stir. Garnish with fresh strawberry if desired.

    I was already planning on picking up a bottle or two of Prosecco for Saturday night, now I’ll be grabbing some strawberries too :) Perfect way to ring in the new year!

    I agree, Paula — no need to save bubbles for a major event! (I uncorked a bottle of bubbly tonight to enjoy with a deconstructed galette.) Life’s too short not to celebrate! Happy New Year!

    Yes, you’re right; enjoy the bubbles while you may! This spring I have tickets to Boston Lyric’s Barber, and I am planning to make this before we head out. (Don’t worry; we’ll be taking the “T,” the Boston subway, from my boyfriend’s house.)
