How to Make Ravioli
This month we celebrate THREE years of our little place here on the internet! Three years of: stirring, chopping, boiling, sauteing, simmering, braising, frying, stuffing, baking, cooking and loving every minute of it. Even the ones where we burned something, and yes it happens. Cooking and taking photographs is so therapeutic for me. I can’t imagine NOT doing either. Besides cooking, and shooting what I’ve loved equally is connecting with all of you. Before I get all sappy and need Kleenex we have some exciting things planned this year and one of those is a monthly homemade pasta series. I’m thrilled to be able to get back to my love of homemade pastas. We’re kicking off with ravioli stuffed with a creamy dreamy RICOTTA cheese filling.
I was taught how to make pasta while I lived in Italy the old school way, with a hand crank and that’s how I’ve done it for years (up until recently). I can tell you that now that I’ve tried pasta making with my KitchenAid stand mixer and attachments, I’ve found that it’s much faster and I make it more often! This monthly pasta series will focus on making pasta using a stand mixer and various attachments. It can all be done by hand with a little muscle though if you want to go that route.
We’re kicking off our pasta 101 series with RAVIOLI! Everyone loves ravioli and you can stuff yours with just about anything, today we’ve gone with a easy crowd pleasing RICOTTA filling. I like to make a double batch when I’m making mine, flash freeze them and then put them into freezer bags so I have some when the cravings hit (and they always do). For these cheese ravioli I like to make a quick sage and butter sauce or I’ll go with a simple TOMATO SAUCE.
It’s amazing what flour, eggs, and a pinch of salt can do isn’t it!

This would be great to win, I have purchased alot of attachments for my last one that did not seem to last very long and now not useable. I used it for every mixing need I had…I think I wore it out LOL.. I loved the mixer however and hope someday to replace it.

Oh my! The first thing I would make would have to be all those breads that my 25 year old KitchenAid can’t handle! Her inner parts overheat, so if I can’t knead by hand, it’s no go:) Your ravioli is beautiful! Maybe that will be my 2012 challenge to myself – to make pasta!

I’ve been in food service for twenty years and have used
commercial mixers on a daily basis. I finally decided to
buy one myself and chose the Artisan series Kitchen Aid.
What a treat! It gets the job done, no messing around, no
fiddling with ingredients. It’s quiet and powerful and
just…does it! I’m 37 and have complete confidence in this
mixer outlasting me. Is it expensive? Yes, it is. But its
worth every single penny and will pay for itself, many times
over.
