Jumbo Lump Crab Cakes
Are you a seafood fan? I am waving both my arms right now like crazy . Growing up near a coast for most of my life I absolutely adore seafood. Lobster, Fish, Crab, Scallops, Shrimp, Oysters, Mussels (did I miss anything) you put them in front of me and I’m going to eat them. Preferably minus the lobster bib but hey if that’s what it takes to get seafood I’ll do it. I’m not proud.
Crab is pretty high up on my list though. I can crack crab legs like nobody’s business. They don’t stand a chance of getting cold on my plate. One of my favorite things to do when I get my hands on jumbo lump crab is to turn them into crab cakes. I’m talking CRAB cakes not filler cakes. These babies are full of crab and as it should be. I like to serve mine with a side of spicy mayo but they’re pretty incredible with just a squeeze of lemon juice too.

What You Will Need:
- 1 pound jumbo lump crab meat
- 1/4 cup panko
- 2 teaspoons old bay seasoning
- salt/pepper
- 2 scallions - thinly sliced
- 2 tablespoons flat leaf Italian parsley - roughly chopped
- 1 egg - beaten
- flour to coat
- 1/4 cup vegetable oil
What To Do:
- Into a large bowl add: crab, panko, old bay, salt/pepper, scallions, parsley and egg. Gently mix to combine.
- Form into 6 equal size patties. Transfer to a baking sheet lined with a silicone mat or parchment paper and cover with plastic wrap. Place in refrigerator until firm.
- Place oil and pan and heat over medium - high heat.
- Lightly coat each patty with flour. Shake off excess. Carefully place into hot oil (do not crowd pan do in batches if necessary) and cook until golden on each side.
- Transfer to a plate lined with paper towels to absorb excess oil.
