Vegetable Tian

I love a reason to break out my mandoline. It makes the most beautiful perfectly uniform slices of just about anything you feel like sliding across it’s insanely sharp blade. Yes, use the cover. It’s not there as optional. It’s sharp. Trust me. As much as I’d like to think I have mad knife skills I simply can’t make uniform slices like the mandoline can. Not to mention it takes seconds to slice things vs. the hour it would take me to even try to get them close.

This dish is not only a pretty face. Oh no. It’s ridiculously tasty. I’ve been known to eat the entire thing myself for lunch. Is that wrong? Sigh. Grab a few slices of baguette to scoop up the sweet onions and garlic bed that the succulent spiral is sitting on. You’ll thank me.

If you don’t want to make a pig out of yourself like me and eat the whole thing it makes a fantastic side dish to any meal.

Vegetable Tian

What You Will Need:

  • 2 tablespoons extra virgin olive oil - divided
  • 1 onion - thinly sliced
  • 2 cloves garlic - minced
  • 1 large squash - thinly sliced
  • 1 large potato - thinly sliced
  • 1 large tomato - thinly sliced
  • salt/pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated Pecorino Cheese

What To Do:

  1. Preheat oven to 375 degrees.
  2. In medium saute pan add 1 tablespoon oil and onions. Cook over medium heat until softened. Add garlic. Spread onion mixture onto bottom of a shallow baking dish.
  3. To assemble: Arrange in a circular pattern: potatoes, squash, tomatoes. Season with salt/pepper and oregano. Drizzle with remaining olive oil.
  4. Cover with aluminum foil and bake for approximately 25-30 minutes. Remove from oven and sprinkle with cheese. Return to oven and continue baking for additional 15 minutes or until cheese has melted and potatoes are fork tender.

    This is beautiful Paula!! I have to start using my mandoline more, I love the way dishes turn out when everything is sliced so pretty like that. Looks delicious!

    This looks so beautiful and on top of that it is vegetarian. I guess I am gonna have to replace squash with eggplants or something else like that and instead of pecorino I am gonna use some fresh cottage cheese and some mozzarella. Hope that works fine. :)
