Couscous with Mushrooms and Herbs

 

I’m not sure what took me so long to jump on the couscous train. I suppose better late than never eh? Regardless I’m glad I finally did. It is pretty incredible. Little balls of pasta-liciousness bursting with flavor. Almost like savory boba balls (you know the ones in bubble tea or at the fro-yo shop) without the liquid burst. Okay not at all like boba balls I just also happen to like those. A lot. Like I have a 7 pound jar in my Amazon cart right now. I don’t kid about food. Ever. What else do I love? Mushrooms. Mushrooms plus Israeli couscous = happy happy happy.

Creamy Polenta with Mushroom Sauce

I love shrooms. It’s true. I love them in all their shroomy forms. From the oh so common versatile button to uppity truffle. I love them all. Now if only I could afford the uppity truffle but alas I’ll have to settle for truffle oil around these parts. I mean I wasn’t born with a  silver spoon in my mouth, just that spoon you see there in the photo which I happen to have  lifted borrowed from my parents house last visit. Technically my Dad insisted that I take it (in case my Mom happens to be reading this, remember I’m the favorite child). Champagne taste on a beer budget. I’m afflicted with it.

Salami and Spinach Stromboli

I’m not quite done with my holiday baking yet (don’t worry there are more brownies coming your way – thank goodness right?) but I have to admit by the end of my marathon baking days I have been craving something salty and dare I say with a little veg it in. Who am I? The catch is I’m not all that hip on the idea of staying in the kitchen to whip up something that will take forever. In comes Stromboli. Think stuffed bread that filled with salty salami, cheeses and a little veg. Who wouldn’t want a slice or two of that?

Has the  hustle and bustle started to creep up on you yet? I gotta admit I’m starting to feel it. I know that as soon as Thanksgiving is here (gah next week) and I put on my elastic pants and eat more than I should that Christmas will be here before I know it. Lists are already starting to float around in my head. Visits from family and friends on the horizon to plan for. Which means cleaning and cooking all the while trying to enjoy the season without stressing so much.

Spinach Stuffed Mushrooms

Rosemary Skewered Grilled Mushrooms

Who needs skewers when you have rosemary? That aromatic herb can be used for so many things. Which is a good thing considering I have a bush of rosemary as large as my car. I’m ALWAYS looking for uses for that hearty herb and one of my favorites is to use it as a skewer. You don’t ever have to remember to soak it for 30 minutes prior to using (pesky wooden skewers) and it lightly flavors the food you’re skewering. AND there’s no washing a metal  skewer afterwards (you know how much I hate doing dishes)!

Mushroom & Spinach Pizza

Pizza is one of life’s simple pleasures. We like to make it at least once a week at our house. Our basic PIZZA DOUGH takes just minutes to pull together with the help of Ruby, our trusty stand mixer (no worries if you don’t have a stand mixer, you can mix and knead the dough by hand and get your workout in for the day too!) Make your dough in the late morning (we all know I’m not a morning person) and it will be ready to roll by dinnertime. Then all you need to do is decide on the toppings. Today we’re sharing our “meaty” mushroom and spinach veg version.

Grilled Steak Kebabs with DOLE Caesar Salad

Do you have a salad’tude: a salad state of mind? I do. That doesn’t surprise you does it?  I have confessed to you before that I am not much of a salad person (other than Caprese Salad which I could eat everyday) . When I do eat it it, 9/10 it is a small spinach salad made with a homemade balsamic vinaigrette. Simple but scrumptious. Probably a big part of my salad’tude is that I don’t get creative with my salads. I tend to look at salads as the intro to dinner, a small supporting character if you will. But my ways are changing and I’ll tell you why.

Braised Pork with Rosemary and Mushrooms {Arrosto con il Rosmarino}

I could tell you how incredibly insanely delicious that braised pork roast is in the photo. OR how I used it to make not one but three meals. But I know you see that gorgeous cassis Le Creuset in the photo and you see giveaway in the title and now you’re heart is beating a little faster and you’re just not thinking clearly. It’s not your fault. It is Le Creuset after all. So I’m just going to get right to it. Christmas is coming a little early for someone. Pizza Grigliata con le Salsicce {Grilled Sausage Pizza}
